Ingredients

Cooking Instructions

• Wash 20 lbs (approximately 9 kg) of chicken thoroughly.
• Mix the RTC masala with 2 litres of hot water to prepare a smooth paste.
• Heat 750–900 ml of cooking oil in a large pan and add the masala paste.
• Cook until the oil separates from the masala and the spices release their aroma.
• Add the chicken and sauté until it is well combined with the masala.
• Add water as required to achieve the desired consistency and cook until the chicken is fully done.
• Garnish with curry leaves, coriander leaves, or red chilli as desired before serving.
