Ingredients

Big onion, tomato, whole red chilli, coriander, turmeric, groundnut, cumin (jeera), fennel, cinnamon, cloves, mustard, black pepper, nutmeg, gram dal, cashew nuts, salt, small onion, garlic, ginger, green chilli, curry leaves, and coriander leaves.

Cooking Instructions

• Wash 20 lbs (approximately 9 kg) of chicken thoroughly.
• Mix the entire RTC masala with 3 litres of hot water to form a smooth paste.
• Heat 1–1.25 litres of cooking oil in a large pan and sauté the masala paste until the oil separates.
• Add the chicken and cook until it is well coated with the masala.
• Pour in 3.5–4 litres of water, adjusting the consistency as desired, and cook until the chicken is tender.
• Add coconut milk or coconut paste and simmer for a few minutes.
• Garnish with fresh curry leaves or coriander leaves and serve hot with rice, parotta, chapati, naan, or dosa.
