Ingredients

Big onion, small onion, tomato, whole chilli, coriander, turmeric, cumin (jeera), fennel, cinnamon, cloves, mustard, nutmeg, black pepper, gram dal, cashew nuts, salt, ginger, garlic, red chilli, coriander leaves, and curry leaves.

Cooking Instructions

• Wash 20 lbs (approximately 9 kg) of chicken thoroughly.
• Mix the RTC masala with 3 litres of hot water to prepare a smooth paste.
• Heat 1–1.25 litres of cooking oil in a large pan and add the masala paste.
• Cook until the oil separates from the masala and the spices release their aroma.
• Add the chicken and sauté until the chicken is well coated with the masala.
• Add 3.5–4 litres of water or adjust according to the desired gravy consistency.
• Cook until the chicken is tender and fully done.
• Add coconut milk or coconut paste and simmer for a few minutes.
• Garnish with curry leaves, coriander leaves, or red chilli as desired before serving.
