Ingredients

Red chilli, coriander seeds, fennel seeds, cumin, pepper, cardamom, cloves, cinnamon, curry leaves, groundnut, turmeric, sugar, salt, onion, tomato, garlic, ginger, coriander leaves, and tamarind.

Cooking Instructions

• Wash 5 lbs (approximately 2.25 kg) of fish thoroughly.
• Mix the RTC masala with 2.5 litres of hot water to prepare a smooth paste.
• Heat 900 ml–1.1 litres of cooking oil (sesame oil preferred) and add the masala paste.
• Cook until the oil separates from the masala, releasing the rich aroma of spices.
• Add water to achieve the desired curry consistency (approximately 7–8 litres) and allow it to cook well.
• Add 1 litre of coconut milk or coconut paste and simmer for a few minutes.
• Add the washed fish pieces and cook until the fish is completely done.
• Garnish with fresh curry leaves and serve hot.
