Cooking Instructions:

Wash 1LB of small Indian Eggplant, cut half of the stem and dry it. Add the Eggplant in a pan and stir fry with any cooking oil until it is cooked. Add 300ml of hot water to the ready to cook masala and make a paste. Heat 125ml of sesame oil in a pan, add the masala mix and stir it well. Let this mixture cook well until the oil separates from the masala. Then add 600ml of water or add the desired amount and cook it until it is done. Now add 1LB of fried Eggplant to the mix and cook it well. Garnish with Coconut Oil, Mustard Seeds, Red Chili, Curry Leaves and Coriander Leaves and serve it.
