Red Chilli, Coriander Seeds, Fennel Seeds, Cumin, Pepper, Cardamom, Cloves, Nutmeg, Curry leaves, Ground nut, Turmeric, Salt, Onion, Tomato, Garlic, Ginger and Coriander leaves
Wash 20Lb of chicken to be cooked. Add 3 liter of hot water to the ready to cook masala and make a paste. Warm 1 to 1.25 liter of cooking oil, add the masala paste and stir it well. Let this mixture cook until the oil separates for the masala. Now add chicken to the mix and sauté until the chicken and masala mixes well. Add water to make the desired consistency (approximately 3.5 to 4L) and let it cook. After the chicken is cooked well, If needed add coconut milk or paste for required consistency, cook for few minutes only. Garnish with curry leaves/ coriander leaves, Red chilli if needed.
